What you need

tsp dijon mustard

tsp salt

tsp fresh ground pepper

tbsp fresh lemon juice

cup avocado oil
Instructions
0 In a 16 oz wide mouth jar, crack the whole egg, and then add your dijon mustard, salt, pepper and lemon juice. You can put any additional add ins at this time as well. Let those sit together for a minute or so, then pour 1/2 cup of avocado oil on top. 1 Place your immersion blender straight down into the glass all the way to the bottom. Start blending at a medium speed and you'll see it start to emulsify at the bottom and turn white. At that point you can drizzle the rest of your olive oil in at a slow speed and let the immersion blender blend everything into the perfect consistency. 2 Remove the blender and give it a good stir.
